The name ‘muffin’ derived from the German word ‘muffle’ which is the name for a type of cake is one of the demanded food item across worldwide. It is preferred at any time of the day but usually at breakfast or in the evening with tea. But a question is raised when it comes to healthy food. So for all the muffin lovers who along with the good taste of muffin also desire a dietary fiber ‘all bran muffins’ are the right choice for them. Bran which is a high dietary fiber content helps to end constipation and also in bowel syndrome. So bran muffins are a healthy option rather being considered as a junk food.
All bran muffins are those which fall in the category of daily breakfast. Since they are not so good looking you can decorate them will some good variations such as nuts and some flavours. Bran is usually a plain muffin but it also contains a large amount of carbohydrate, fiber, phosphorous, and calcium content.
But to make an all bran muffin an ideal one there are some techniques which should be followed otherwise you will end up cursing the muffin.
Primary step while making muffin is not to over mix the batter. When over mixed the gluten development from the flour and liquid mixture tends to stiffen the muffin and also gives a dry texture to it. For a good muffin the batter after mixed should be a bit lumpy with some flour at the bottom of the bowl. Bakers usually prefer 10 to 15 strokes for mixing the batter. The lumps in the batter should not be cared as these will blend up while baking in the oven.
Overfilling of the cups of muffin should be avoided as they spoil the look of the muffins. Keeping the level upto ¾ of the cup is enough. When you run out of batter you can also fill some cups with water so they can help in making the muffins tendered.
The temperature of the oven should be checked. It should not be too hot during pre heating or while baking as it will burn the upper crust of the muffins. The oven should also not be opened frequently in between to check the muffins as doing this will result in unbaked muffins.
Ingredients also play a vital role. Properly measured ingredients and fresh ingredients should be used. The chief ingredients such as flour, bran, sugar, baking powder etc quantity should be checked before mixing.
