These days safety of both products and consumers is now a major requirement of any new product or process. Accordingly, compelling regulations on usage of hazardous, carcinogenic, or toxic solvents, as well as high energy costs for solvents recovery have curtained the growth of the natural extracts industries. The methodologies that comply with both consumer 10 preference and regulatory control and that are cost effective, are becoming more popular. The major processes employed for extraction of natural flavour and fragrances from plant origin include hydrodistillation, solvent extraction, supercritical fluid extraction (SCFE), ultra sound extraction, microwave accelerated extraction etc. In present report, the first three techniques were used for extraction of essential oils, flavour and fragrances.
