Rural oil extraction usually takes place near the production areas of raw material. This provides the small-scale processor access to raw materials, helps ensure that perishable oil crops are processed quickly and reduce transportation costs. For rural communities and the urban poor, unrefined vegetable oils contribute significantly to the total amount of oil consumed. Raw oils are affordable for low-income groups and serve as important sources of b-carotene and tocopherols.
In order to maintain the quality of the raw material, care is needed during and after the harvesting of fruits that are carriers of oil, which are perishable and susceptible to the degradation of fats. The bruise of fresh palm fruits speeds up the activity of lipase leading to fat degradation. Oleaginous crops such as peanuts are prone to mold infestation during storage. This is reduced by heat treatment: steam or boiling, along with drying in the sun to reduce the moisture content.
