Soy milk (also spelled soy milk) is a herbal beverage produced by soaking dried soybeans, grinding in water, boiling the mixture and filtering the residues. A traditional food staple of East Asian cuisine, soy milk is a stable emulsion of oil, water and protein. Soy milk can be produced at home with a soy milk machine. A number of commercially prepared brands are sold in pre-packaged bottles and tetra packs. It is often used as a substitute for cow's milk for individuals who are vegan or lactose intolerant.
Soy milk (doujiang) originated in China, probably during the Han Dynasty (202 BC to 9 AD), after the introduction of the rotating millstone and was widely used to grind wheat. It did not become widely used in China until the 1800s, when it was discovered that prolonged heating made the taste better and easier to digest.
John Harvey Kellogg patented a version of soy milk with acidophilus for his sanatorium patients. It was sold commercially in the United States until the 1950s. Soy milk was reintroduced into the US market by Vitasoy in 1979; the first national manufacturer of soy milk was Sunrich Food Group, which introduced its products in 1985.
