Solvent Extraction using Soxhlet method (conventional): In soxhlet extraction, different nature of solvent ranging from polar such as methanol, ethanol to non polar such as hexane, chloroform, acetonitrile, acetone were used for extraction of vanillin. The experiments have been done to make a choice of the solvent, and to optimize solvent to solute ratio and temperature of the bath. The maximum yield of pure vanillin was obtained in dehydrated ethanol using 100: 1 solvent to solute ratio.
Vanillin is a natural ingredient, which is extracted from cured vanilla beans. The characteristic flavor and aroma of vanilla developed in properly cured beans is the result of number of chemical and biochemical transformations. The vanillin is obtained through either chemical synthesis or biotransformation or extraction from natural vanilla pods which contains 2-3% w/w vanillin. The principle uses of vanillin are in food flavoring, ice-cream industries as flavor, pharmaceuticals and chemical intermediates. Since the consumption of the vanillin is high in food industries, it is necessary to develop an environmentally suitable extraction method. In the present work it has been proposed to extract vanillin by conventional Soxhlet extraction and a novel Ultrasound assisted extraction method.

Ultrasound assisted extraction: Use of ultrasound has gained considerable interest in chemical synthesis to improve selectivity and activity performance. In this work, we extend the novel concept of use of ultrasound in extraction. Ultrasound can enhance distribution coefficient which leads to different composition than convectional soxhlet extraction. The optimum solvent from the soxhlet extraction is used for optimizing extraction parameters such as extraction time, solvent to solute ratio, effect of preleaching time, concentration of ethanol for ultrasound assisted extraction.
