Flavonoids are largest group of naturally occurring phenols in both free state and as glycosides in which one or more of phenolic hydroxyl groups are combined with sugar residues. They are regarded as C6- C3-C6 compounds. The natural pigments were extracted from the flower petals using solvent like methanol. The pigments were identified by chemical test and chromatographic techniques and efforts are on to isolate and characterize the pigments by spectral methods.
